2. Enishi Ramen 

Enishi is an authentic brand that originated from Kobe, and is even on the Kobe Michelin guide. It used to be one of the best-kept secrets in Singapore, but not anymore. The two unique menu items — the intensely rich Dan Dan Noodles (S$19.80) and a delicate Dashi Broth Ramen (from S$18.80) — have drawn snaking queues, and for good reason.

Most people go there for their dandanmen, an umami atomic bomb that explodes with hefty cashew nut and sesame flavours. But my personal preference is for the dashi’s gentle but deceptively rich profile, scratching the itch for a strong broth without feeling too greasy.

3. Hakata Ikkousha

As an international brand with over 40 outlets all over the world, Hakata Ikkousha’s quality and authenticity are up there with the best. Their specially-made Hakata style ramen are thinner than the average ramen shop in Singapore, which gives them a springier texture.

Sapporo Nishiyama is a hidden gem frequented by chefs serving up some of the most authentic and unpretentious Hokkaido-style ramen you can find on our shores. First-timers must slurp down the hearty and savoury Miso Butter Corn Ramen ($19.80). The sweet corn pairs wonderfully with the robust miso broth, which is further enhanced by a knob of butter for extra creaminess.

Ramen doesn’t have to be just soup-based — there is also Mazesoba, a very popular dry-style ramen that many in Singapore liken to a “Japanese bak chor mee”. Kajiken is the first in Singapore to sell these sauce-filled bowls of ramen which give the same comforting gratification if you’re not in the mood for soup.

7. Bari Uma

This is one of my personal favourites for Tonkotsu ramen in Singapore because of how sexily thick the broth is. If you thought your regular tonkotsu was thick, you gotta get a mouthful of their viscous, almost bisque-like broth.

While such a thick broth may sound very overwhelming, my bowl is licked clean every single time — it’s that addictive. Consistency is also their strong suit, with every component in their Ajitama Uma (S$14.90) executed well, especially the smoky and tender grilled char siu.

Ramen Nagi is a ramen joint with many fans in Singapore, due to their use of premium ingredients air-flown all the way from Japan in each bowl of ramen. Plus, their unique flavours are something to watch out for.

Another underrated and affordable gem that non-Japanese aficionados might not know about is Ramen 99, a traditional joint modelled after the “Ramen Mobile Food Stalls” common in Yatai Street, Japan.

The straightforward Tonkotsu Ramen (S$9.90++) is a good choice for a normal tonkotsu but the seasonal Black Ma-yu Tonkotsu Ramen (S$12.80++) beats it handily with its potent dose of black garlic.

10. Ramen Matsuri

Another Boat Quay hidden gem that ramen lovers will be more familiar with, Ramen Matsuri is actually run by the same people who went on to open the successful Kajiken brand. So they definitely know what they’re doing when it comes to ramen.

What’s special about Matsuri is the collagen-rich chicken broth in their signature Torikoku Ramen (S$14.80), inclusive of a free noodle upsize — perfect for the perpetually hungry. Alternatively, dig into the unique Mapo Mazesoba (S$16.80) for a satisfying treat that has a nice kick to it.

11. Sapporo Misono

The first ever Hokkaido speciality ramen concept by Keisuke, Sapporo Misono, has impressed many people with its unique butter miso ramen, which features a wildly different type of broth hard to find at many other ramen shops in Singapore.

12. Menya Kokoro

Known as the biggest mazesoba chain in Japan, Menya Kokoro is different from Kajiken in that their mazesoba is done Tokyo-style instead. The noodles used are way thicker and feel closer to jjajangmyeon than it is to bak chor mee (AKA the local dish it is typically compared to).

Despite each bowl of Tokyo Mazesoba (S$12++) coming doused in a rich minced meat sauce and ground saba fish to give it a more meaty flavour, it is not as cloying as you might expect. There are even versions with Unagi, Spicy Mala, and even one that’s 100% vegan.

13. Ramen Hitoyoshi

Say you’re a fan of Keisuke Tonkotsu King but also allergic to those tedious queues that form outside during meal times, where can you go? The closest substitute for that in Singapore will be Ramen Hitoyoshi, which is opened by ex-cooks from Keisuke.

And honestly, they aren’t that far off in terms of quality. A thick and robust soup at its base, springy noodles, and a nicely charred aburi char shiu make this a solid ramen option choice. While they don’t offer free-flow eggs like Keisuke, the sweet corn and beansprouts are equally nice to nibble on while you wait for your piping hot ramen to arrive.

14. Nantsuttei

In the mood for black garlic ramen? A few ramen places offer it in Singapore but Nantsuttei, a hidden ramen shop at level 7 of Orchard Central, specialises in the fragrant and garlicky ramen variety.

Famously known for being the first ramen shop to get one Michelin star — a huge feat for a humble ramen shop — Tsuta has become a mainstay of Singapore’s ramen scene ever since it landed on our shores back in 2016.

While their queues aren’t as crazy as they were before, they still serve very hearty bowls of The Original Shoyu Soba (S$16.80) with dashi broth that will warm your tummy right up. Light but with some depth, it comes with an intoxicating kiss of truffle to keep your palate excited.

16. Kanada-Ya

Hailing from Fukuoka, Kanada-Ya prides itself as offering the No. 1 truffle ramen in the world. The simple yet stunning Truffle Ramen (from S$22.90), which features a tonkotsu base flavoured with aromatic black truffle oil and truffle jelly, is extremely well-loved at its London outposts — a limited number of bowls are available daily.

Don’t fret, ramen purists. For the most authentic Kyushu ramen experience, go for the Kotteri Tonkotsu Ramen (from S$14.90), although I prefer the flavour-packed Gekikara Ramen (from S$16.90), with spicy miso and minced pork — both do a pretty good job in holding their own.

17. Tamako Ramen-ya

In Singapore, a single bowl of ramen can go up to S$16 or more. In that sense, Tamako Ramen-ya is one of a kind, serving up some of the most affordable ramen you can find.

Prices have increased by S$1 ever since our article was published, but the tried-and-tested Traditional Shoyu Ramen (S$6.80) and Sambal Tonkotsu Ramen (S$6.80) are still very pocket-friendly, served with the customary toppings of seaweed, bamboo shoots, fishcakes, cha shu, and half a ramen egg.

18. Brothers Ramen

Brothers Ramen has garnered a loyal fanbase for its generous portions, and thick and creamy chicken collagen-based broth. You can’t go wrong with the Brothers Ramen (S$12.90), which features the signature soup base with pork and chicken chashu, homemade noodles, and menma.

If you’re up for a challenge, the Jiro-style Megamen (S$12.90) is as fun to eat as it is massive, piled with heaps of beansprouts cabbage, seaweed, braised pork, fatty chashu and an oozy-yolked ramen egg.

19. Tonkotsu Kazan Ramen

A unique dining experience awaits at Tonkotsu Kazan Ramen, which offers an unprecedented style of “volcano ramen”, in which the noodles are placed in a heated stone pot with a cone-shaped lid. The steam from the simmering tonkotsu-based soup rises from the vent at the top — like a volcanic eruption.

Two of the Osaka ramen chain’s most popular hot stone offerings are the Hinomaru Tomato Kazan (from S$15.80), reminscent of the sweet tomato broth you find in hotpot restaurants, and the comforting Kazan Curry (from S$15.80). Portions here are huge, so come hungry.

20. Ramen Taisho

Formerly located at Maxwell Food Centre, Ramen Taisho is a cosy and relatively hidden neighbourhood eatery dishing out homely bowls of ramen with springy, QQ noodles and juicy chashu. Big and bold flavours take center stage in the fragrant Spicy Black Garlic Tonkotsu Ramen (S$11.80) and Gyokai Tonkotsu Ramen (S$12.80). The latter, a seafood-based broth, is further accentuated by the addition of powdered fish and chilli.

You can also nibble on complimentary beansprouts seasoned with lots and lots of spicy chill oil and wash ’em down with free-flow barley tea as you wait.

Previously located at Havelock 2, a mall at Clarke Quay, the popular bakery has relocated and launched a brand new dine-in concept in Bugis.

Sweet-toothed customers walking along North Bridge Road will be absolutely spoilt for choice by the mind-numbingly diverse range of bakes ranging from simple dark chocolate fillings to more unique creme brulees.

The bakes are not crazy pricey at S$6.50 per cookie or brownie, considering how hefty they are. We could feel ourselves getting kinda full just from eating one brownie — it was so so rich.

Personally, I prefer huge chunky Levain-Bakery-style cookies that are basically as big as your palm — which is exactly what Whiskdom specialises in.

As much as we enjoyed the nice crunchy crust and chewy insides of the traditional Chunky Chip Walnut (S$6.50), the Matcha Lava (S$6.50) stole the show with that flow.

Perhaps it’s a bit sweeter than usual matcha but it’s got a decent amount of earthy notes and more importantly, plenty of silky texture to compliment the already great cookie dough. A definite must-order.

As far as brownies go, there are few places that do a mean blackout brownie, and Whiskdom is one of them.

These babies were moist, slightly fudgy, and chock full of fillings, like gooey and ultra-decadent dark chocolate. That said, the richness does overpower the fillings a bit.

But you can really find something for everyone at Whiskdom — there’s the popular Speculoos Delight (S$6.50), bittersweet Matcha Cocoa Brownie (S$6.50), fruity Raspberry Dark Chocolate (S$6.50), and even a Gimme S’mores (S$6.50) that’s embedded with a gratuitous amount of toasted marshmallows.

The bakeshop has also made its first foray into the savoury world with a selection of loaded bagelwiches.

Go for the Korean-inspired K-Bae-Gel (S$15.90), a tried-and-tested combination of kimchi chicken, gochujang aioli, and kimchi slaw. Alternatively, the Eggsplode (S$12.90) is heaving with creamy egg salad, hardboiled eggs, and furikake.

Besides coffee like your typical Black (S$4.50) and White (S$5.50), you can now try speciality drinks like the trendy Dalgona Coffee (S$7.50), topped with crunchy honeycomb, and the Whiskdom Galaxy (S$6.90), blue pea-infused strawberry soda with konjac pearls.

A second dine-in outlet is slated to open in Orchard Central very, very soon — new dessert options in town are always welcomed.

Can a 23-year-old fry a good plate of Hokkien mee? You Fu is perhaps best known for its young chef who has been helping out his father since he was 14.

You’d be surprised to find that his frying is immaculate, delivering a plate that is loaded with both wok hei and prawn sweetness. Pretty incredible for a young chap, when more experienced hawkers in Singapore struggle to fry a good Hokkien mee.

Hainan Fried Hokkien Prawn Mee

The other hokkien mee stall in Golden Mile Food Centre, Hainan Fried Hokkien Prawn Mee, is the polar opposite of You Fu. It’s masterfully fried by a seasoned veteran and takes my vote for the best dry-style Hokkien mee in Singapore.

The noodles are moist but springy, with an intoxicating mix of umami and wok hei. Be prepared to brave the queues — it’s well worth the wait.

Swee Guan Hokkien Mee

Wok hei is a common buzzword to describe many hawker foods and Swee Guan’s old-school charcoal-fried Hokkien mee is bursting with it.

Portion sizes tend to fall on the smaller side, but the fresh seafood and smoky richness of the bee hoon and yellow noodle mixture make it worth a trip down to Geylang.

Hokkien Man Hokkien Mee

Owned by a former sous chef at the three-Michelin-starred restaurant, Les Amis, Hokkien Man Hokkien Mee is also another popular stall that has made its way into the Michelin Guide.

Each plate of noodles is a cross between the wet and dry style, with a garlic-forward prawn head broth and the option to add additional ingredients like abalone or egg. The stall is only open for four hours a day since the chef personally preps everything, a process that takes up to 10 hours.

Come Daily (Tian Tian Lai)

Be it the gooey wet-style noodles, or the fragrant stock and garlicky kick, just know that this is a well-rounded crowd pleaser sure to satiate anyone.

Geylang Lor 29 Hokkien Mee

Geylang Lor 29 Hokkien Mee is one of the rare few places in Singapore, along with Swee Guan, that specialises in charcoal-fried Hokkien Mee. That’s because both are run by siblings who learnt the art of charcoal frying from their father.

Geylang Lor 29’s version isn’t as intensely smoky but still packs a punch, with a nuanced flavour dominated by lard and umami seafood. You can also order a side of juicy pork satay to munch on in between bites of Hokkien mee.

While not dry-style per se, their version is stir-fried in pork stock till the noodles are fully absorbed. It packs a good amount of flavour, amplified by cut red chilli instead of the usual sambal.

Picanhas’

Serving its customers with the motto “Steaks For The People”, halal steakhouse Picanhas’ specialises in the pincanha, a unique rump cap made popular in Brazil.

There are only two proper steak mains on the main menu — the Brazilian and Japanese-inspired Picanha Don (S$20) and the Queen of Steak (S$24). Each slab of steak is dry brined, slow-cooked and then finished on the stove with binchotan butter, making it immensely rich and succulent.

Picanha possesses a robust beefy flavour reminscent of sirloin, and is best paired with Sides (S$7) like the Cream Spinach or double-cooked Potatoes with sriracha mayo.

S$17 is surely one of the lowest you can find for a good Ribeye. And where better to spend that S$17 than at one of the most established places for affordable steak in Singapore — UNO Beef House. It’s an open secret that you must order their Black Pepper Ribeye Steak when you’re here. They know that a steak doesn’t have to be too complicated — their sauce is a simple beef jus sauced with black pepper for a bit of zing, so the steak’s flavours can shine.

The cherry on top is a cheesy, crispy potato croquette that’s unique to them. But if you’re feeling moreish, you can even get other cuts like tenderloin for S$20. The prices are all kept very reasonable here.

Don’t let the casual coffeeshop setting at Meet 4 Meat fool you. Run by a former Wooloomooloo Steakhouse chef, the stall is known for dishing out gourmet meats at affordable prices.

Meet 4 Meat’s biggest selling point may be their Beef Wellington (S$30.50), but the grass-fed Argentina Ribeye (S$25.50) and Australian Tenderloin (S$26.50) are not to be overlooked.

If you’re dining with a friend (or two), order the Australian Bone-In Ribeye (S$65) to share. The hefty and tender 800g grass-fed steak is seared over charcoal, oven-roasted till medium rare, and glazed with a flavourful brown sauce. Delish.

Braseiro’s concept is quite interesting — they specialise in authentic French steak frites (steak and yes, free-flow fries) at wallet-friendly prices.

Smokin’ Joe may be located in a hawker centre, but these guys are passionate about steaks and grilled meats. Aside from being known for its impressive S$10k Spanish restaurant-grade Josper oven, the stall was even selected as one of the hawkers under Makansutra’s upcoming Urban Hawker food hall in New York.

You can get pretty high-quality cuts of signature Smokin’ Joe steak, like the AU Ribeye 200g and AU Tenderloin 180g at just S$19 and S$26 respectively. Really, how many places can you find steak painstakingly seared over a charcoal flame at these prices?

They also offer a Wagyu Cheesy Hamburger Steak (S$16) if you want something more affordable. It may not be a proper steak per se, but a 160g wagyu patty for S$16 ain’t a bad price at all.

This stall is located in a modern kopitiam that’s just a 10 minute walk from Ang Mo Kio MRT. Besides them, the kopitiam also houses popular stalls selling Mookata and Crab Maki. You can mix and match your supper to your heart’s delight here!

For the lok lok itself, most items are just S$1 save for the exception of Cheese Tofu and Scallops which are S$2. They also provide four sauces including Homemade Chilli, Sweet Thai Chilli, Satay, and Sweet Sauce.
