Udon Shin Singapore: New Arrabiata Udon & Snow Crab Tempura

Since opening in November 2025, Udon Shin Singapore has released its first seasonal special, a Singapore-only exclusive dish available from 16 June 2026 to 13 September 2026.

As the first international expansion of the Tokyo-based brand, the launch of this seasonal special in Singapore is a milestone celebrated by both the Japanese and local teams alike. Drawing culinary inspiration from coastal Japanese summers, the dish pays homage to the seasonal tradition of enjoying fresh, peak-season tomatoes to combat the region’s intense heat and humidity.

At the centre of this launch is the kamaage-style Arrabbiata Udon (S$30), which utilises the vibrant sweetness of fresh, peak-season tomatoes to create a rich, house-made spicy tomato base. This is further enhanced with velvet confit tomatoes, grated parmesan cheese, a drizzle of aromatic bonito-infused oil, black pepper, and delicate micro shiso leaves.

Completing the experience is a freshly fried assorted tempura platter. Presenting an elevated iteration of the Japanese summer tradition of feasting on crisp, deep-fried crabs. The platter features two premium pieces of Snow Crab Leg Tempura, lightly battered to preserve the crab’s natural sweetness, alongside four varieties of crisp, seasonal vegetable tempura. 

Blending a burst of tangy flavours from the juicy tomatoes with the natural sweetness of the snow crab, the Arrabbiata Udon delivers a bright, balanced flavour profile that is both refreshing and deeply comforting, mirroring the vibrant essence of the summer season.

We also tried the signature Carbonara Udon (S$24) that comes with a fried-to-perfection bacon tempura. The crispiness of the bacon complements the chewy, handmade udon that has been smothered in the creamy carbonara sauce mixed with raw egg. We ended it off by pairing both dishes with Udon Shin Iced Blue Pea Lemonade Soda (S$8) and Iced Yuzu Bliss Tea Soda (S$6) – both a refreshing cleanse to the savouriness of the mains.
