Fortuna Shakes Up the Menu with Brand-New Flavours

Share

This November, Fortuna’s regular diners can look forward to a refreshed menu filled with brave, playful interpretations of familiar Italian favourites by the newly appointed Executive Chef Silvio. He’ll be bringing his Italian roots and years of international culinary experience to Fortuna, along with unexpected twists on Italian classics.

With most of the menu reworked, Fortuna takes diners Dal Sud al Nord (from South to North). Here’s what we can’t wait to try, course by course.

The journey begins with Pumpkin Arancini (S$26), a fried rice ball filled with pumpkin purée and pancetta, finished with balsamic glaze. If fresh tomatoes are your thing, the Caprese (S$22) brings together marinated heirloom tomatoes and basil pesto, with the option to add Prosciutto to make it fancier!

One dish I noticed that is staying on the menu is the Maflde (S$38), my ultimate favourite, especially when drizzled with their crispy chilli oil. Something new is the Trottola (S$35), bringing together porcini mushrooms, shaved black truffle and Parmigiano.

I’ve been to Fortuna at least twice, and the pizzas were always a hit, leaving no crust and crumbs behind. Personally, I’m intrigued to try the Barbara (from $34), inspired by lasagna, with Parmesan-Ricotta mousse, and crispy pasta shards and the New Gen Mushroom Trip (from S$36).

End your meal with their Frittelle (S$18), a deep-fried dough coated in cinnamon sugar, served with custard and Nutella for maximum indulgence. Otherwise, their Coppa al Pistachio (S$18) has also caught my attention for a sweet treat fix.

Beyond the food, there’s also The Story in Six Drinks, a new cocktail collection where each creation tells its own story. Drinks I can’t wait to try are A Broken Promise pairs rum with salted caramel, and Nina, a concoction of mango and Aperol.

For coffee lovers, Fiesta mixes bourbon and espresso, and Riflessione, a clarified Mezcal Espresso Negroni, might be the drink for you!

Together, the restaurant is serving up new food and cocktail menus, signalling a fresh chapter for Fortuna and bringing renewed creativity to both the kitchen and bar. Dal Sud al Nord will be available at Fortuna from November 2026.
