Vending machine speakeasy Ume San 100 returns with their newest Vol. 4 menu featuring laksa ramen, matcha old-fashioned cocktails & more

Tucked away inside the unassuming Fortune Centre is Singapore’s first Umeshu and highball bar, Ume San 100. This mall is full of hidden gems, though this one is especially so. Make sure you don’t walk right by it! 

Ramen bar by day and cocktail bar by night, this spot is serving up its newest Volume 4 menu, celebrating the harmony between nostalgia and newness.

A quick trip up to the second floor brings you to a bright fluorescent display. The speakeasy turns out to be hidden behind the wall of vending machines. 

It felt like a little adventure, as if we were being transported to another dimension.

The bar displayed many bottles of Umeshu all the way from Wakayama, which is touted as the birthplace of the Japanese plum wine.

Enough about that, let’s get to the food first. We started with the Laksa Soup Ramen (S$22), Ume San 100’s tribute to Singapore’s 60th birthday. The noodles were springy and paired nicely with the spiced broth.

The Super Thick-Cut Salmon Sashimi Platter (S$20) was quite a mouthful in the best way. Gone are the days of paper-thin slices of salmon sashimi — these generous cuts delivered a nice bite, with a satisfying, soft chew.

Other mains also did catch our eyes, like the Foie Gras Bara Chirashi Don (S$28) and Money Bags (S$16) full of salmon, tuna, and spicy asari. 

To have alongside our food, we got the Suisho (S$29) or Crystal. It was a martini-style cocktail with Ginrei Gassan Umeshu and a Kuro Tobiko garnish. 

The black caviar pearls were a little fishy with the textural pops and savoury notes to contrast the stronger cocktail. 

Not to mention, it’s also perfect for your ‘quiet luxury’ photos on Instagram.

Finally, we ended with the Shizuku (S$26) or Droplet, which is a matcha old-fashioned featuring the Misao Umeshu. It was smooth and light — our little tea cocktail to round off the night.

With inventive cocktails and unexpected flavour pairings, Ume San 100 proves that fusion doesn’t have to be forced. This hidden bar delivers just the right mix of fun, flair, and familiarity, making it well worth the little adventure.
