Vibe and explore unique fusion dishes at Singapore’s first Spanish izakaya serving Japanese-fusion dishes like Mackerel Potato Salad, Miso Yuzu Scallops, Pork Belly Donabe and more

Fans of Tapas 24, good news! 

Head Chef Carolina Garcia Santamaria has teamed up with Chef Jordi Jou to bring you HUMO, a new Spanish izakaya right in the heart of Tanjong Pagar.

If you’re unfamiliar with the term, an izakaya is a casual Japanese bar. Think of it as Japan’s version of a Spanish tapas bar (in a way). At HUMO, you get the best of both worlds, in a cosy yet vibrant space complete with lively music and unapologetically bold fusion dishes.

Oh, by the way, both chefs have Michelin experience, so you can literally rest assured.

The interior of HUMO is distinctly Japanese featuring rows of traditional lanterns and walls adorned with curated manga posters (we love Dr. Stone and Fruits Basket in this house).

Attack of Titan fans, take note. You’ll love the Chef’s Table (peeps, the Titan in the hole of the wall had us laughing). Other than the eye-catching anime wall, it provides a front-row seat to the two talented chefs in action.

Who’d imagine eating potato salad with their hands?

That’s exactly what we did with the Japanese Mackerel with Spanish Potato Salad (S$12). This dish is a creative take on classic potato salad with an added crunch from the cracker and a hint of fishiness.

If you’re a fan of sweet and savoury combinations, the Cured Miso Hokkaido Scallops with Yuzu Sauce (S$24) might be your pick. While we found it a tad salty, the silky scallops paired beautifully with the grilled oranges.

For a safer bet, try the Roasted Japanese Sweet Potato with Nori Butter and Ikura (S$12). It’s basically a more indulgent version of your Don Don Donki sweet potato with all that butter.

My dining partners absolutely love the Roasted Stuffed Chicken Wings with Piquillo Peppers and Aioli Sauce (S$18). Say goodbye to messy eating, because these wings are boneless and fuss-free. 

And, don’t worry about the spice because the peppers were surprisingly tender and sweet.

Now, for my personal favourite, the Pork Belly & Iberico Chorizo (S$38). 

This dish is comfort in a pot, with steaming hot rice topped with crispy pork belly, served in a traditional Japanese earthenware pot (donabe).

To end off on a refreshing note, you can’t go wrong with the Strawberries, Hokkaido Milk Ice Cream and Sherry (S$14). It’s a simple yet satisfying classic.

If you’re looking for bold new flavours in a laid-back, inviting atmosphere, HUMO is the perfect spot (it was seriously so vibey).
