Remember when I said in a previous article that we’d seeing a lot more F&B brands from Japan setting up shop in Singapore?

Here to prove my point is yet another highly-anticipated opening from Japan — a wagyu ramen restaurant with outlets in Tokyo, Hong Kong, and Saudi Arabia — Mashi No Mashi.

Helmed by the founders of speciality wagyu brand WAGYUMAFIA, Mashi no Mashi will be bringing its exquisite wagyu offerings to Singapore, its first Southeast Asian outpost, in March 2024.
They’ll be opening at Guoco Midtown in Bugis.

Details about the menu have yet to be released, but fingers crossed that we’ll get to try the iconic Wagyujiro, which is supposedly the “world’s first 100% wagyu ramen”.

Inspired by the legendary Ramen Jiro in Tokyo (it’s practically a “cult” of ramen fanatics at this point), this massive bowl of ramen is composed of 24-hour Kobe beef bone broth prepared using ribs, thigh bones, and an eight-year barrel aged soy sauce.

There are also housemade noodles, thick-cut wagyu chashu, wagyu fat, and a literal mountain of cabbage, beansprouts, and raw garlic. It’s as indulgent (and daunting) as it sounds.

Otherwise, the other standout is the Tokusei Wagyu Tsukemen, comprising slow-cooked, torched Ozaki beef draped over a bed of noodles, with bamboo shoots, cabbage, and a soft-boiled egg.

You’re meant to dip the noodles in the thick wagyu bone broth, and slurp it up with gusto.

Regardless of what ramen you order, don’t forget to pair it with the Wagyu Gyoza, which is filled with Ozaki beef and minced vegetables, seared till the exterior is crisp, and served with signature ‘Wagyusco’ hot sauce.

I really hope the drool-worthy (and extremely photogenic) Wagyu Donburi — thinly sliced seared Ozaki beef on rice topped with a raw Japanese egg yolk — also makes it to the Singapore menu. I may or may not be hyperventilating just thinking about it.

You can also expect Singapore-exclusive ramen dishes showcasing the flavours we all know and love.
