Take date night to the next level with theatrical flame-torched tomahawk steak & more in Novena

What’s your idea of a perfect date night? For most people, it’s hard to go wrong with steak and wine. If you’re in need of a new dinner-and-drinks spot, swing by Tomahawk for, you guessed it, tomahawk steak. Previously known as Oma’J Restaurant, this contemporary pet-friendly steakhouse in Novena strives to be Singapore’s specialist in wagyu tomahawk steaks.

Helmed by Chef John from the now-defunct Pasta J in Thomson, Tomahawk dishes out bold and complex Asian-inspired flavours in a chic yet unpretentious setting. I got to try some of their signature menu items — here’s what I recommend.

Slurp-worthy sharing plates

The Burratina with Salted Fish (S$32) puts a spin on the Italian classic. You’ve got creamy buffalo milk mozzarella, the acidity of toasted vine tomatoes, the sweet, floral notes of honey, salted fish for umami, and delightfully crisp focaccia crackers — it was a party in my mouth.

You may not be the greatest fan of lamb, but the Lamb Empanada with Butter Puff Pastry (S$18), flavoured with green curry and peppers, might just change your mind. Dip ’em in the accompanying minty Greek yogurt dip, and the already-subtle gaminess takes a backseat.

One of the highlights of the entire meal, the piquant Beefy Tomato Soup ($13) is a master in the art of seduction. Scoop out the buttery bone marrow and eat it on its own, or mix it into the soup. Sheer, unadulterated bliss, I tell you.

As for seafood, the flavour-packed Squid Ink Lobster Stock Risotto (S$47) with tiger prawns and Japanese scallops is prepared using a concentrated lobster stock for that umami. Alternatively, the Roasted Octopus Leg (S$40) comes with an addictive homemade oyster sauce (which I wish there was more of) — all you need is a squeeze of lemon.

Skip the Iberico Pork Loin Ribs (S$12 per 100g) and head straight for the signature Wagyu Tomahawk Ribeye Steak (S$20 per 100g). MB 6/7 Australian Wagyu is wet-cured for up to two weeks and coated in black sesame. Served with your choice of savoury brown sauce or truffle black sesame, this is the dish that’ll knock your socks off.

For the ultimate steak experience, order the tried-and-tested Twice Sautéed Shrooms (S$18) or Cheesy Creamed Spinach (S$15).

Be prepared for a theatrical element, as all tomahawk steaks are torched and sliced tableside. The slices of beef were a luscious pink, some bordering on rare, and gorgeously seared. Savour every bite in between sips of red wine, and enjoy to your heart’s content.

Kitchen torches are provided at each table, so you can char and caramelise your meat (and those meltingly-tender fatty bits) however you like.

If you’re all steaked out, end the meal on a lighter note with Fizzy Fruits (S$16). Longan is made fizzy using pressurised CO2 and drizzled with honey and lime zest. The end result tastes like a cross between soda and popping candy.

Tomahawk provides a unique dining experience that’s definitely worth checking out. Bring your partner and perhaps even your pupper. I’ll be back when my tomahawk steak cravings arise.
