Leila showcases their Middle East and Mediterranean flair, providing dishes made for sharing and drinks for every conversation. 

Hot girl dinner begins with Kubana (S$15), soft, pillowy bread with crushed tomatoes, garlic confit, and harissa for a gentle spice. For mains, the Mini Pita Arayes (S$18) is ideal to share between 2, along with the Green Chilli Shrimp (S$27) or the Chicken Manseef (S$33) for flavourful protein.

Achar (S$26) to tickle the back of my throat with Achar Shrub and Tabasco; P.B Espresso Martini (S$27) is the kind of drink that calls for all Peanut Butter and Hazelnut lovers; B.K.T (S$26) screams comforting with a hint of curiosity, with hot Bak Kut Teh broth and Rice Vodka; and finally, as a qualified Gen Z, how could I miss Gen Z Maicha (S$26), with Genmaicha and Chivas? Sold!

Dimple sets the scene with cocktails that translate the scenes of Hong Kong into delectable drinks. Some personal favourites were Sour Plum (S$25), inspired by chilled sour plum itself and tomatoes, and Yuan Yang (S$25), which tastefully brings a local element into a glass. 

Who knew a bowl of healthy Cantonese dessert could be constructed into a fun drink? Dimple does it right with Longan & Red Date (S$25), incorporating Winter Melon, White Fungus, and Whiskey. Brown Butter (S$25) is an interpretation of Hong Kong movies, with Cognac and Bitter Dark Chocolate.

The last night ends with a Thai-themed party! Look forward to a pop-up by Camp Krapao from 6pm onwards, while food lasts, on 17 October. Chef Noom’s dishes are specially prepared to pair well with drinks – kap klaem, “drinking food”. 

Order the Isaan Sausage (S$18) served with assorted fresh vegetables and the Chicken Cartilage Larb (S$18), accompanied by their classic Peroni (S$13) to cut through the grease. The Koi Nuea (S$24) is a raw beef salad with black sesame crackers, a perfect match for cocktails featuring bright citrus and herbal notes: Mimosa (from S$15) and Tropical Daydreaming (S$20). 

The richness of the Green Curry Prawn Toast (S$25) will go well with the Hustlemagic Highball (from S$17) and Margarita Spritz (S$18). Finally, the Pork Krapao (S$18) pairs best with refreshing cocktails to complement the spicy kick of the dish – Gin Rickey and Lychee Cobbler (from S$15).

Ramen bar by day and cocktail bar by night, this spot is serving up its newest Volume 4 menu, celebrating the harmony between nostalgia and newness. 

A quick trip up to the second floor brings you to a bright fluorescent display. The speakeasy turns out to be hidden behind the wall of vending machines. 

It felt like a little adventure, as if we were being transported to another dimension. 

The bar displayed many bottles of Umeshu all the way from Wakayama, which is touted as the birthplace of the Japanese plum wine. 

Enough about that, let’s get to the food first. We started with the Laksa Soup Ramen (S$22), Ume San 100’s tribute to Singapore’s 60th birthday. The noodles were springy and paired nicely with the spiced broth.

The Super Thick-Cut Salmon Sashimi Platter (S$20) was quite a mouthful in the best way. Gone are the days of paper-thin slices of salmon sashimi — these generous cuts delivered a nice bite, with a satisfying, soft chew. 

Other mains also did catch our eyes, like the Foie Gras Bara Chirashi Don (S$28) and Money Bags (S$16) full of salmon, tuna, and spicy asari. 

To have alongside our food, we got the Suisho (S$29) or Crystal. It was a martini-style cocktail with Ginrei Gassan Umeshu and a Kuro Tobiko garnish. 

The black caviar pearls were a little fishy with the textural pops and savoury notes to contrast the stronger cocktail. 

Not to mention, it’s also perfect for your ‘quiet luxury’ photos on Instagram. 

Finally, we ended with the Shizuku (S$26) or Droplet, which is a matcha old-fashioned featuring the Misao Umeshu. It was smooth and light — our little tea cocktail to round off the night. 

With inventive cocktails and unexpected flavour pairings, Ume San 100 proves that fusion doesn’t have to be forced. This hidden bar delivers just the right mix of fun, flair, and familiarity, making it well worth the little adventure.

At New Bahru, newcomer TopTable smashes its way onto the scene as Southeast Asia’s largest table tennis-themed cafe and bar, as well as Singapore’s first table tennis social club.

To celebrate TopTable’s opening, get 20% off ala carte items for the whole of June.

TopTable is extremely spacious. You’ll be greeted with mostly tables to your left and at the end, and a bar and table tennis tables to your right.

While table tennis is the star, two dart boards with scoreboard screens are provided too, and staff will set up a game of beer pong if you’re up for more.

Before playing, we fueled up on TopTable’s menu.

We ordered three of their recommended pizzas, the Prosciutto (S$30), Brussels Sprouts (S$26), and Prawn (S$30).

We found these flavours leaning on the sweeter side, but my favourite had to be the Prawn Pizza. This was incredibly saucy and the cheesiest of the three. 

The brussels sprouts added texture with their crunchiness, and you can drizzle on chilli oil to give a fiery kick. 

Meanwhile, Prosciutto was topped with arugula, which added a fresh touch as the prosciutto alone would have been a tad salty. 

Pair these mains with the Bites, of which we have to spotlight the Spiced Squid and TT Fries. 

The Spiced Squid (S$17) comes with Chipotle mayo that spices things up. But even without the sauce, the squid was well-seasoned, with a nice crunchy batter while being tender on the inside.

TT Fries (S$15) (or TableTop Fries) are a Chef’s Special, and for good reason. These were drizzled with torched Kewpie mayo, prosciutto crisp, and parmesan, providing a balance between creaminess and saltiness.

Of the extensive alcohol options, try the TopSpin Colada (S$18), Love All Lychee (S$19), and Espresso Rally (S$21). 

The non-alcoholic drinks are worth a shot as well, including Mocktails, Shakes & Floats, Matcha, Coffee, and more.

One standout is the Iced Strawberry Matcha Latte (S$10). Here, you’ll be given a bowl of matcha to pour and mix in your glass. 

The results are worth the effort, as this was smooth, with a robustness from the matcha and the strawberry flavour coming through nicely. 

If the food and games sound like a match made in heaven, then you can book TopTable’s various packages fit for parties and team-building sessions.

But if you’re here just for table tennis, you can sign up for the classes. The Private Class (S$150 per lesson) comes with a 60-minute coaching session, while the Table Tennis Masterclass (S$90 per pax) is better suited for groups.

Do note that the Table Tennis Masterclass is an open group, two-hour-long class, with a maximum group size of 10 people.

Or for just a casual gathering, choose between Play & Sip for games and alcohol, Pong, Beer Pong, Darts for games only, and Group Packages for smaller groups.

The platter of savoury and sweet garnishes are also to die for – from bleu cheese-stuffed olives to an absinthe rinse. 

And you can’t just have a tipple without a nibble! Spring for a refreshing Shrimp Cocktail (S$22) with a house-made tangy cocktail sauce for a juicy bite. The fresh shrimp are bouncy and springy, providing a toothsome bite. 

For a more flavourful light snack, try the Pastrami Poppers (S$16). The gruyere and mozzarella filling simply melts in your mouth with every bite.

Now to checking out the heavy hitters on the menu. The Silver Service Hot Dog (S$30) boasts a house-made sauerkraut and sweet pickle radish on top of a wagyu beef hot dog. The tangy flavours balance out the savoury notes well, lending to a well-rounded bite. 

Finally, a comforting classic and our personal favourite  – the humble Grilled Cheese Sandwich (S$23). Served with tomato soup, this timeless pairing delivers warmth and nostalgia in every bite.

Whether you’re here for the fashion or the flavours, The Coach Bar at Keong Saik delivers a full-sensory experience like no other.

I definitely have, way too many times, and it really sucks. You have to either force yourself to gulp it down (because we can’t bear to waste S$22) or pass it on to a friend. Oh, and it’s even worse when you think it’s a flavour profile you’ll like.

But that won’t be an issue at Draft Land along Purvis Street, and you’ll find out why.

The renowned cocktail bar from Taiwan was first opened with the aim of making cocktails more accessible and affordable. Not only are they the first in Asia to start serving specialty cocktails on tap, but they’ve also got four other branches in Taiwan and Hongkong, which makes Singapore their fifth outpost.

Take your pick from a diverse range of over 20 cocktails on tap, all of which are priced at S$18++ or S$20++ each, and accompanied by its ABV (alcohol by volume) percentage, so you’ll know how strong (or light) your drinks are.

Instead of bartenders, you’ll find fun and personable “draftenders” who introduce flavours, give recommendation, and interact with guests. This brings us to their Sample Service, where guests can explore and sample a variety of cocktails before committing to a full glass.

Let’s just say my dining (drinking?) partner and I had a blast sampling our way through the menu. Of course, you are advised not to push it and go all out on the samples without ordering a drink — it’ll be really, really obvious if you try.

If you’re seeking something light and refreshing, go for the Silver Fizz (S$20) and Fancy Iced Tea (S$20). I was not a fan of the Mimosa (S$15 for happy hour, S$18), which tasted like a fragrant orange juice, but it may sit well with you if you want a drink that barely tastes of alcohol.

Those who prefer deeper and more syrupy flavours will enjoy the Popcorn & Coke (S$20), Espresso Martini (S$20), and Ghost in The Shell (S$20), As a dark rum drinker who loves anything sour, the Afternoon Tea Punch (S$20), a concoction of Courvoisier VSOP, dark rum, earl grey, and lime, was love at first sip.

Oh, but if you manage to get your hands on the limited-edition Oolong Tea Collins (S$20), a vodka-based number with fragrant notes of oolong, plum, and osmanthus, please, please go for it.

Cocktail bars that also make good food are a big yes from me.

So be sure to save some room for the bar’s impressive line-up of modern Taiwanese-inspired snacks, which include the likes of the Braised Pork Arancini (S$14), an Italian spin on lu rou fan (braised pork rice), comprising golden rice balls filled with braised pork, quail eggs, and pickled cucumber.

We also got to try Draft Land’s rendition of dan bing, or Taiwanese egg pancakes, in the form of the Egg Pancake (S$14 for happy hour, S$16) with aged cheddar and jamon iberico.

But it was the Wagyu Cold Noodles (S$16), which features perfectly marbled wagyu A4 carpaccio, accentuated by toasted sesame sauce and a luscious soy cured yolk, that completely stole the show.

Other bar bites include the likes of Fried Oysters (S$15), Fermented Pork Ribs (S$14 for happy hour/S$16), and even a Heart Attack Fried Rice (S$15), that comes with not just Taiwanese sausage and pork lard, but also a whole roasted bone marrow — very indulgent!

End off with bubble tea, but in dessert form, with the Alishan Bubble Tea (S$14), consisting of Alishan milk tea gelato and gula melaka pearls topped with pecorino cheese shavings. Sweet, a little savoury, and very decadent.

Oh, did I mention that Draft Land opens at 2pm on weekends? Now I know where to go whenever I feel like day drinking.

But if Jack & coke, vodka crans’ and flaming lambos are what first come to mind when the word “cocktail” is brought up, it’s time to move on and open your eyes to the wonderful world of proper cocktails — the kind you find at slightly more upscale bars, restaurants, and bistros. 

So, if you’ve ever ventured into a cocktail bar without knowing where to start, I’ve got you covered with these 10 must-know classic cocktails, and some of the best bars in Singapore to imbibe ‘em at. 

1. Gin & Tonic

The gin & tonic is one of my go-to classic cocktails, and for good reason. It’s one of the most incredibly versatile and clean-tasting drinks that require just two ingredients — gin and tonic water poured over ice. 

Originally used as a traditional cure for malaria in the early 19th century, this highball-style (more on that later) cocktail offers so, so much room for experimentation. It is typically served with a slice or wedge of lime, but you can spice it up with assorted fruits, herbs, and vegetables — especially those that enhance the botanical notes of gin. 

My personal picks? Cucumber and kaffir lime leaves. 

This may be a drink you can easily whip up at home in mere seconds, but why not enjoy it at the swanky ATLAS, home to one of the largest gin collections in the world? 

Otherwise, the Islay Gin Tonic from Orchard speakeasy The Other Room puts a smoky twist on the classic G&T with lemon zest, rosemary smoke, and a spiced herbal tonic.

2. Highball

G&Ts aside, highballs are traditionally composed of a base spirit, like whisky, vodka, or gin, and a non-alcoholic, usually carbonated mixer. It’s one of the best classic cocktails for beginners (especially those who’ve yet to test out their alcohol tolerance) to start with, given its light and refreshing profile.

In Singapore, the whisky highball, a staple in Japanese drinking culture, is what usually comes to mind. It’s easy to make, available almost everywhere, and pairs excellently with most food. 

If you order it at a Japanese izakaya or restaurant (even Don Don Donki sells it at their in-house bar), you’re likely to get whisky or shochu, a mild-tasting Japanese distilled spirit, in a tall glass with ice and lemon.  

There are plenty of fun flavoured variations to explore, like umeshu (a sweet plum liquor), mandarin, and the most popular of the lot, yuzu.

3. Martini

Moving on to one of the world’s most iconic mixed cocktails, the martini. When you think about the word “cocktail”, the visual of a conical stemmed glass comes to mind.

In its most classic form, it comprises dry gin and vermouth (a dry fortified wine with herbaceous notes) garnished with an olive or lemon twist. You can even drink it “dry”, “wet”, “dirty”, with a different garnish, so on and so forth. 

However, the martini has evolved a lot over the years. Its simplicity makes it easy to come up with other variations, creating new drinks (that still use the term “martini” despite straying away from the OG) in the process. 

For instance, it is not uncommon to see martinis made with vodka instead of gin. 

Two of the most beginner-friendly variations out there are the P*rn Star Martini, which sees vodka, passion fruit, and vanilla served with a shot of champagne, as well as the sweet and tangy Cosmopolitan, the cranberry juice creation made famous by Sex and the City.

You can find 1-for-1 martinis in almost every flavour imaginable at No. 5 Emerald Hill — think peach, chendol, mango, osmanthus, and my personal favourite, jello. 

4. Espresso Martini

How could I go on about martinis without bringing up the espresso martini? 

Widely believed to have been created by London bartender Dick Bradsell in the late 1980s for a young model who asked for a drink that would “wake me up, and then f*ck me up“, it truly is the most well-known coffee-based cocktail out there.

The original recipe calls for espresso, coffee liqueur, and vodka (along with a sweetener), but most tend to incorporate flavours like vanilla, salted caramel, and even citrus.

Sweet, boozy, and a little bitter, crowned with a layer of thick froth — it is the platonic ideal of a drink you can imbibe at any time of day (for me, at least). 

Stay Gold Flamingo might be your new go-to for a classic three-ingredient espresso martini, but it is taken up a notch at Night Hawk, which incorporates both dark rum and vodka, served topped with a hot coconut foam. 

I’m a fan of the variation served at The Store, which pairs espresso, coffee liqueur, and Cuban rum with homemade coffee kombucha and hazelnut syrup.

5. Margarita

In the mood to party? Look no further than the world’s most popular tequila-based cocktail, the margarita. 

The traditional recipe features tequila, triple sec (orange-flavoured liqueur), and lime juice — with or without sweetener and a salt rim — striking a good balance of sweet, sour, and salty that never fails to lift the spirit.

Although margaritas are already super refreshing, I have a soft spot for those of the blended (AKA frozen) variety. Let’s just say that if you’ve never had the pleasure of sipping on a frozen margarita on a sweltering hot day, you’re missing out. 

You can find margaritas at any decent Mexican restaurant, but you won’t go wrong with the fun, fruity, and way-too-crushable variations from both Cafe Iguana and Margarita’s Dempsey Hill. 

Otherwise, Cat Bite Club delivers a tantalising blend of tequila and mezcal (a smoky and earthy spirit made from agave) through their Cat Bite Margarita.

6. Daiquiri

Believe it or not, a true daiquiri is not a flavoured, often artificial-tasting frozen slushy commonly served at resorts and chain restaurants (as shown above).

It is, in its purest form, a three-ingredient Cuban cocktail that requires only rum, lime juice, and sugar. I daresay it is one of those classic cocktails every bartender should be able to whip up perfectly, given that it is really easy for the ratios to be thrown off-balance. 

The best daiquiris are strong, crisp, and tart, although some prefer theirs on the sweeter side. Despite not being served in a glass of ice (it is only shaken with ice, and then strained), it should be refreshing and thirst-quenching. 

Tiki bar Low Tide may keep it fairly simple sans extra ingredients, but they use a blend of four different types of Caribbean rum, yielding a deeply aromatic and flavourful daiquiri.

Alternatively, rum-focused cocktail bar Sugarhall puts a Japanese twist on the classic with their Plum Daiquiri, which incorporates umeshu for a tangy, sweet, and mellow profile.

7. Mojito

Want something even more refreshing than a daiquiri? The mojito, a rum-based cocktail, might just become your new best friend.

Combine rum, fresh lime juice, and sugar or simple syrup with muddled (mashed) mint leaves, top it off with crushed ice and splash of soda water, and there you have it: a fresh, herbaceous, and citrusy number that’s highly regarded as a “summer drink”.

With that being said, you can order a mojito almost anywhere and at any time of year in sunny Singapore, but you won’t go wrong with the rendition at American diner Overeasy.

8. Whisky Sour

If you find whisky daunting, there’s no better way to ease your way into the spirit’s good books than with a whisky sour. 

Tart, mildly sweet, and seductively silky, it is traditionally made with rye whisky, lemon juice, sugar, and egg white, but some recipes call for bourbon in place of whisky due to its subtle vanilla and caramel notes. 

Before you start freaking out, egg white is used in the majority of cocktails that fall under the “sour” category — drinks composed of a base spirit, sugar, and citric acid (in the form of citrus).

It’s the same as making meringue; the egg white gets aerated, giving the cocktails a smooth and velvety mouthfeel. How do you think they get such a lovely thick and even layer of foam?

But of course, many bars serve whisky sours without egg white, so I suggest trying it both ways. Also, it would be best to check with the staff or bartenders if you are unsure.

Ordering a whisky sour at a proper whisky bar is a no-brainer for beginners, but I recommend heading down to the famous Jigger & Pony during happy hour for their signature Yuzu Whisky Sour.

9. Spritz

The spritz is a day-drinker’s dream come true. This Italian wine-based cocktail commonly served as an aperitif (alcoholic drinks served before a meal) and consists of prosecco, bitter liqueur, and soda water with a generous scoop of ice.

It’s one of those classic cocktails you order if you want something that’s easy to drink, especially on a hot day, and with low-alcohol content.  

The vibrant orange-hued Aperol Spritz is perhaps the most widely-ordered variation out there; it’s sweet and slightly bitter, with zesty and herbal notes. 

No wonder some consider it to be one of the best classic brunch cocktails!

You can order it at most Italian restaurants, but Caffe Fernet’s rendition will do you no wrong. It may be a bit of an acquired taste, though, so I recommend you try your first aperol spritz with a friend who actually enjoys them. 

For a more approachable option, head on down to VUE, Singapore’s first rooftop spritz bar, where you’ll get to sip on the delightful Hugo Spritz, which gets its floral and gently herbaceous notes from the use of elderflower liqueur.

10. Old Fashioned

If you enjoy the taste of whisky, but have yet to venture into the world of whisky-based cocktails, the Old Fashioned is the best drink to start with. 

After all, it would be a crime to not include one of the world’s oldest and most famous classic cocktails in a listicle like this. 

All it takes is a simple yet suave concoction of bourbon or rye whisky, sugar, and Angostura bitters (a botanicals-infused spirit used to flavour cocktails), finished off with an orange or lemon twist (or both). 

Strong and spirit-forward, but with a subtle sweetness that makes it oh-so sippable, it’s easy to see why this drink has never gone out of style.

Newcomers to the drink can hit up Jigger and Pony for their excellent Old-Fashioned, which promises to be “deliciously bitter, smooth, rich, and balanced”. 

Live Twice adds a touch of complexity to the classic with their King Cole Old Fashioned, that features fernet branca (an Italian herbal liqueur, or amaro) in place of the bitters, yielding mild herbaceous notes.

At the end of the day, this list only serves as a starting point for those keen on exploring these time-honoured classics. It’ll take time for you to discover what you like (and don’t like), but I bet you’re gonna have a blast, regardless.

If there’s one song most of us would be able to identify from the first sentence alone, it would be this iconic piece from The Little Mermaid — especially since this is one of those fairytale stories we grew up with. 

Because of that show, I’ve always wanted to see a mermaid IRL. If you can relate, The Mermaid at ORTO West Coast is the place to go if you want to dine and watch mermaid shows at the same time! 

From the moment you step into the restaurant, you’re bound to feel like you’ve just entered the underwater world — think blue tones, coral lights, and more. 

While The Mermaid offers ocean-themed items like Grilled Whole Squid (S$18), Seafood Stew (S$42), and more, their menu largely focuses on alcoholic beverages. 

We’d recommend starting your experience with dishes like their Burrata Salad (S$22), which came with roasted watermelon, cherry tomatoes, and brown butter vinaigrette. My dining partner and I particularly enjoyed the “Fish & Chips” (S$16), which isn’t your average deep fried fish — rather, it features snapper rillette atop crispy potato pave. 

Drinks-wise, you’ll find yourself utterly spoilt for choice. Whether you’re looking for cocktails, wines, beers, or other spirits, there’s defo something for you. Fellow girlies, they’re even giving away one free tiger soju tower (U.P. S$58) for every group of four ladies on Wednesdays. 

Now, for the main draw — the mermaid performances. I’m not exaggerating when I say that this was one of the most magical moments of the night!

For about ten minutes, get ready to be spellbound as the mermaids swim together in perfect harmony, blow kisses, and strike the cutest poses. Be sure to come for dinner (or for post-dinner drinks) to catch them in action, since they only perform at night. 

Pro tip: Call in to reserve a table near the stage so that you get the best view of the mermaid performances!
